Ingredients

For the Cake

  • 175 grams all-purpose flour 
  • 30 grams unsweetened cocoa powder 
  • 1 teaspoon baking powder 
  • 1/2 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 100 grams granulated sugar 
  • 2 large eggs 
  • 100 ml vegetable oil 
  • 1 teaspoon vanilla extract 
  • 100 grams sour cream 
  • 100 ml strong brewed Trumeta Mushroom coffee, cooled
  • 100 grams chopped fresh cherries 

For the Chocolate Ganache

  • 100 grams dark chocolate, chopped 
  • 100 ml heavy cream

Directions

  1. Preheat the oven to 180°C (350°F). Grease and flour a 22 cm (9-inch) round cake pan. 
  2. In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. 
  3. In a separate bowl, beat the sugar and eggs until light and fluffy. Gradually beat in the oil and vanilla extract.
  4. Mix in the sour cream and coffee. 
  5. Fold in the dry ingredients until just combined, then gently stir in the chopped cherries. 
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. 
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. 
  8. For the ganache, heat the cream until it just begins to simmer. Pour over the chopped chocolate and let stand for 1 minute. Stir until smooth. 
  9. Pour the ganache over the cooled cake and top with fresh cherries for decoration.
