  • 150 grams granulated sugar 
  • 1 large egg 
  • 1 teaspoon vanilla extract 
  • 1 tablespoon Trumeta Mushroom Coffee
  • 50 ml sour cream

For the Crumb Topping 

  • 50 grams all-purpose flour 
  • 50 grams brown sugar 
  • 1/2 teaspoon ground cinnamon 
  • 30 grams cold unsalted butter, cubed

For the Icing Drizzle

  • 60 grams powdered sugar 
  • 1 tablespoon milk


  1. Preheat your oven to 175°C (350°F). 
  2. For the dough: whisk together flour, baking powder, baking soda, and salt in a bowl. In another bowl, cream together the butter and granulated sugar until light and fluffy. 
  3. Beat in the egg, vanilla and Trumeta Mushroom Coffee or any Instant Coffee of your choice.. 
  4. Mix in the sour cream until well combined.
