Directions

  1. Preheat your oven to 180°C (350°F). Line a muffin tin with cupcake liners. 
  2. In a bowl, whisk together flour, baking powder, cinnamon, and salt. 
  3. In another bowl, beat together the sugar and eggs until light and fluffy. Gradually mix in the oil and vanilla. 
  4. Stir in the dissolved coffee. 
  5. Gradually mix the dry ingredients into the wet until just combined. 
  6. Fill the cupcake liners two-thirds full with the batter.
